  • FOOD + BEVERAGE MANAGER

    The Drake's fourth outpost, Drake Commissary, a bakery, larder and bar in the emerging Junction Triangle neighbourhood, is the creative culinary hub of The Drake's food and beverage operation. The Drake Commissary is a multi-purpose space, that will function as a casual, social neighbourhood hub, alongside The Drake’s culinary workshop, offering modern counter or traditional table service with made-from-scratch, healthy foods to eat in or take home.

    We are seeking a candidate with a combination of skills and experience that include operational excellence in a high volume business, as well as a proven track record for outstanding food + beverage service, a solid understanding of event management and natural abilities as a motivating and inspiring team leader. The ideal candidate will bring management experience from a similar environment, as well as best practices in guest service, staff management, operations, safety and compliance.

    RESPONSIBILITIES:

    In joining our F+B management team, you will be bringing experience in hiring, training and mentoring an exemplary front of house team. You will have a demonstrated track record in achieving set objectives in sales, labor cost management, employee retention, customer service and satisfaction, health + safety, AGCO/legal compliance and cleanliness standards. You are a genuine and natural leader, who believes in the art of hospitality, building a fun and dynamic work environment and who takes great pride in the offerings at Drake.

    Reporting to the Food and Beverage Director, you will be an integral part of a small management team responsible for overseeing the day to day running of the restaurant and bar, events as well as on-site programming and activations.

    While on shift, your role will include, but not be limited to:

    • Understanding, adhering to and executing all F+B operational policies + procedures, standards and training programs
    • Ensuring a unique and genuine guest experience by empowering staff to resolve issues, while acting as a supportive and active leader who will manage situations as they evolve
    • Maintaining a strong focus on achieving and/or exceeding revenue targets, within acceptable labor cost and service standard parameters
    • Monitoring and managing service, quality, health + safety and cleanliness
    • Ensuring that AGCO, municipal and provincial laws are being adhered to
    • Working in tandem with the host team to ensure all reservations are input correctly and honored in a timely fashion, to maximize restaurant yield and guest experience
    • Ensuring that during all of our services, each of our guests are treated with respect and care

    QUALIFICATIONS:
    • 2-3 years of progressive management experience in a fine or casual dining environment
    • Strong preference given to candidates with a minimum ISG, WSET or comparable Level 1 wine training
    • Awareness of and interest in current culinary trends in the marketplace
    • Operations management experience in a high volume establishment with significant experience with reservation systems, event and large party bookings
    • Experienced trainer and mentor to large staff teams
    • Demonstrated patience, tact and diplomacy while leading a diverse team of industry professionals
    • Ability to multi-task, remain cool and keep up in a fast paced environment.
    • Excellent interpersonal and communication experience, both verbal & written
    • Ability to manage up, down and across in a muti-unit organization with various corporate partners
    • Excellent organizational skills, with timely delivery of all required administrative work
    • Experience with Silverware, Microsoft Office and Open table, a strong asset
    • Flexible to work evenings and weekends and holidays
    • Smart serve certified

    Drake Commissary; The Drake Hotel's first commissary outpost to open in spring 2017 on Sterling Rd., in the evolving Junction Triangle, is seeking a dynamic, passionate FIRST COOK, who is looking to join a fast-paced, talented kitchen team. This position offers the opportunity to work with a fantastic culinary team focusing on artisanal techniques, like in-house baking, fermenting, smoking, preserving and pickling, to produce high quality, healthy dishes for guests to enjoy on site or take home. The role is committed to providing exceptional quality and service to our guests.

    Responsibilities include but are not limited to:
    - Demonstrate continuous effort to improve operations, streamline work processes, and work cooperatively to provide quality seamless team-oriented guest service
    - Assisting in menu development
    - Set up workstations with all needed ingredients and cooking equipment
    - Working with Café Chef to prepare café and Drake Pantry items. Including mise en place for café items before and during service.
    - Cook food for service and food to go including daily baked pasta, vegetables and grain salads, stews, soups, sandwiches and pizzas and dressings, pestos etc.
    - Maintain a clean and organized work space
    - Keep a sanitized and orderly environment in the kitchen and obeying all health and safety procedures

    Requirements:
    - Experienced Line Cook with 3-5 years in a similar high volume restaurant
    - Available to work full time flexible schedule including days, evenings and weekends (Brunch- Saturday + Sunday)
    - Must be disciplined and have respect for colleagues
    - Culinary diploma is preferred
    - Must be available evenings and weekends

  • PREP COOK

This position offers the opportunity to work with a fantastic culinary team focusing on artisanal techniques, like in-house baking, fermenting, smoking, preserving and pickling, to produce high quality, healthy dishes for guests to enjoy on site or take home. The role is committed to providing exceptional quality and service to our guests.

    Responsibility include but are not limited to:
    - Working with Café Chef to prepare café and Drake Pantry items. Including mise en place for café items before and during service
    - Production of back of house items including stocks, soups, soups, sauces, pestos, dressings etc.
    - Prepare and package Drake Pantry items (fresh pastas, jarred sauces, pestos, soups, maple syrup, jams, charcuterie etc.)
    - Complete and report all wholesale and internal orders on time and to Drake Commissary standards
    - Support the Shipper Receiver on monthly inventory of all prepared pantry items, and café chef for all café items and produce.
    - Order and maintain food inventory to keep it at its freshest
    - Responsible for maintaining the highest standard of cleanliness of the cafe and its equipment

    Requirements:
    - Accepting applicants with minimal experience, but a willingness to learn, work hard, and grow
    - Someone who is organized, able to work fast, with strong communication skills.
    - Available to work full time, evenings and weekends
    - Must be disciplined and have respect for colleagues

The role is committed to providing exceptional quality and service to our guests.

    Responsibilities include but are not limited to:
    - Providing a warm, welcoming and courteous experience to all guests
    - Cash handling and accepting payment
    - Responsible for heating and packaging the food sold during service, ie. Pizza, sandwiches, hot table, brisket, etc.
    - Set up workstations with all needed ingredients and cooking equipment
    - Laying out all products on line and making sure display looks full and appetizing and that the signage is accurate and corresponds to each product
    - Working with Café Chef to prepare café and Drake Pantry items. Including mise en place for café items before and during service.
    - Preparing ingredients to use in cooking and pantry items (chopping and peeling vegetables, cutting meat)
    - Prepare food for service and food to go including daily baked pasta, vegetables and grain salads, stews, soups, sandwiches and pizzas and dressings, pestos etc.
    - Chopping and picking lettuce/herbs for salads
    - Maintain a clean and organized work space
    - Keep a sanitized and orderly environment in the kitchen and obeying all health and safety procedures

    Requirements:
    - Must have a minimum of 1-3 years experience in a very fast paced environment
    - Available to work full time flexible schedule including days, evenings and weekends (Brunch- Saturday + Sunday)
    - Must be disciplined and have respect for colleagues
    - Culinary diploma is preferred
