  • PREP COOK

    Drake Commissary; The Drake Hotel's first commissary outpost to open in spring 2017 on Sterling Rd., in the evolving Junction Triangle, is seeking a dynamic, passionate PREP COOK, who is looking to join a fast-paced, talented kitchen team. This position offers the opportunity to work with a fantastic culinary team focusing on artisanal techniques, like in-house baking, fermenting, smoking, preserving and pickling, to produce high quality, healthy dishes for guests to enjoy on site or take home. The role is committed to providing exceptional quality and service to our guests.

    Responsibility include but are not limited to:
    - Working with Café Chef to prepare café and Drake Pantry items. Including mise en place for café items before and during service
    - Production of back of house items including stocks, soups, soups, sauces, pestos, dressings etc.
    - Prepare and package Drake Pantry items (fresh pastas, jarred sauces, pestos, soups, maple syrup, jams, charcuterie etc.)
    - Complete and report all wholesale and internal orders on time and to Drake Commissary standards
    - Support the Shipper Receiver on monthly inventory of all prepared pantry items, and café chef for all café items and produce.
    - Order and maintain food inventory to keep it at its freshest
    - Responsible for maintaining the highest standard of cleanliness of the cafe and its equipment

    Requirements:
    - Accepting applicants with minimal experience, but a willingness to learn, work hard, and grow
    - Someone who is organized, able to work fast, with strong communication skills.

    The FOOD + BEVERAGE SUPERVISOR position provides a unique opportunity for passionate hospitality professionals who are looking to build experience towards their ongoing career development, and build the foundations of supervising and leading in a high-volume, guest-focused environment.

    This role involves floor management in a very busy and fast-paced downtown environment, team coaching and leadership and providing a superior level of guest engagement and guest experience.

    We are seeking a candidate with a combination of skills and experience that include operational excellence in a high volume business, as well as a proven track record for outstanding food + beverage service, a solid understanding of event execution, reservation systems and team leadership.

    The ideal candidate will have a passion for hospitality and be eager to build experience, as well as best practices in guest service, staff management, operations, safety and compliance.

    REQUIREMENTS:

    • At least 2 years of progressive front of house experience in a high volume fine or casual dining environment
    • Previous experience as a trainer and mentor to large staff teams
    • Extensive food + beverage knowledge a must
    • Experience working in various FOH restaurant roles a bonus
    • WSET or similar certification preferable
    • Smart serve certified
    • Experience with Open Table and Silverware a bonus
    • Demonstrated patience, tact and diplomacy while leading and working alongside a diverse team of industry professionals
    • Ability to multi-task, remain cool and keep up in a fast paced environment
    • Excellent interpersonal and communication experience, both verbal & written
    • Flexible to work early mornings and weekends and holidays
    • Demonstrate a drive and motivation for professional development

    Job Responsibilities:

The role is committed to providing exceptional quality and service to our guests.

    Responsibilities include but are not limited to:
    - Providing a warm, welcoming and courteous experience to all guests
    - Cash handling and accepting payment
    - Responsible for heating and packaging the food sold during service, ie. Pizza, sandwiches, hot table, brisket, etc.
    - Set up workstations with all needed ingredients and cooking equipment
    - Laying out all products on line and making sure display looks full and appetizing and that the signage is accurate and corresponds to each product
    - Working with Café Chef to prepare café and Drake Pantry items. Including mise en place for café items before and during service.
    - Preparing ingredients to use in cooking and pantry items (chopping and peeling vegetables, cutting meat)
    - Prepare food for service and food to go including daily baked pasta, vegetables and grain salads, stews, soups, sandwiches and pizzas and dressings, pestos etc.
    - Chopping and picking lettuce/herbs for salads
    - Maintain a clean and organized work space
    - Keep a sanitized and orderly environment in the kitchen and obeying all health and safety procedures

    Requirements:
    - Must have a minimum of 1-3 years experience in a very fast paced environment
    - Available to work full time flexible schedule including days, evenings and weekends (Brunch- Saturday + Sunday)
    - Must be disciplined and have respect for colleagues
    - Culinary diploma is preferred

    We are seeking candidates with a combination of creativity, skills and experience that include operational + kitchen management excellence in a high volume business, as well as a proven desire to strive for continuous culinary innovation. The ideal candidate will bring management experience from a similar environment, as well a strong culinary background, staff management, operations, safety and compliance.

    RESPONSIBILITIES:
    Reporting to the Drake Commissary's, Kitchen Manager, you will play a key role as part of a small, interdependent management team that may include: Hotel, Culinary, Special Events, Security, Human Resources and Corporate Service departments.

    While on shift, your role will include, but not be limited to:

    • Preparation of mise en place, staff meals, specials and catering functions
    • Hands on receiving of products + ordering
    • Understanding, adhering to and executing all kitchen operational policies + procedures, standards and training program
    • Ensuring a unique and consistent guest dining experience by actively managing the team and resolving issues, should they arise
    • Training, motivating and overseeing a team of approx. 8 staff
    • Maintaining a strong focus on achieving and/or exceeding revenue targets, within acceptable labor cost and service standard parameters
    • Monitoring and managing service, quality, health + safety and cleanliness
    • Use local and seasonal ingredients to create innovative menus specials
    • Accountable for ordering and working closely with our commissary kitchen
    • Responsible for the preparation and execution of catering events and service

    QUALIFICATIONS:
    • 3-5 years of progressive kitchen leadership experience in a fine or casual dining environment
    • Demonstrated awareness of and interest in current culinary trends in the marketplace
    • Operations management experience in a high volume establishment with significant evening and catering/special events business
    • Experienced trainer and mentor to large staff teams
    • Demonstrated patience, tact and diplomacy while leading a diverse team of industry professionals
    • Ability to multi-task, remain cool and keep up in a fast paced environment.
    • Excellent interpersonal and communication experience, both verbal & written
    • Excellent organizational skills, with timely delivery of all required administrative work
    • Flexible to work days, weekends and holidays
    • Red Seal Certification or equivalent considered a strong asset

  • COUNTER SUPERVISOR

    With service and quality at our core, we are seeking a COUNTER SUPERVISOR to join our dynamic team. The Counter Supervisor is one of the front line faces of the Drake Commissary, that organizes the flow of orders received from the counter and restaurant, to ensure guests receive dishes in a timely fashion, while supervising the counter team, leading by example and providing exceptional customer service.

    Duties and responsibilities
    • Greet guests and process take-out orders
    • Ensure accurate and proper handling of the POS
    • Prepare and package orders according to Drake Standard and guest needs
    • Notify guests of take-out orders over the PA system
    • Dispatch restaurant food orders to the EXPO, in an accurate and timely manner
    • Ensure that food and drinks are well presented
    • Stock and merchandise counter; food display, take-out containers, etc.
    • Maintain awareness of menu and special items among the team (ingredients, preparation method, etc.)
    • Find opportunities to upsell and shares techniques with the team
    • Responsible for balancing cash with the sales report
    • Train new team counter staff
    • Maintain food quality and portion control at all times
    • Maintain high level of food safety and cleanliness practices at all times
    • Ensure the workstation and equipment are ready for use
    • ‪Build relationships with the community, locals and regulars
    • ‪Contribute ideas and support team members – create a fun and safe work environment
    • Must be able to do and assist in all the tasks of the counter help staff.

    Qualifications & Experience
    • 1-2 years supervisor experience in a restaurant and/or customer service environment
    • Must have excellent communication skills and fluent in English
    • Strong organization skills with the ability to multitask + problem solve under pressure
    • Enthusiastic and energetic qualities are necessary to keep up with the fact paced environment
    • Ability to lead and work as part of a team
    • Detail oriented
    • Food handler certification required
