Catching up With: Amanda Ray, Drake Devonshire’s Executive Chef

Summer at The Devonshire is heating up! We’re so excited to host you again lakeside and introduce you to our new Executive Chef, Amanda Ray. Amanda landed at The Drake Devonshire back in March, and she’s been hard at work dreaming up delicious things ever since. After a several-year stint in Montreal, we couldn’t be more thrilled to have on our side of the border again. Come say hi and find out what Amanda’s cooking up.

    Sweet or salty?
Don’t make me choose. Salty, but with a side of candy.

What are you listening to these days?
I’m a huge music lover and it’s a mad mix of things. Depends on my mood, but lately: Tom Misch, Khruangbin, Hailu Mergia, Bob Moses, Keinemusik.

June is such a good food month in southern Ontario. What’s the seasonal/local food you crave most right now?
Rhubarb, peas for sure, fresh lettuces coming up, favas, beets. But really, I just want July and tomatoes to come.

Tell us about Drake Devonshire’s summer menu.
Mix of different cuisines, featuring County farm flavours, lakeside delights and some classics.

    Favourite quotation?
“Live in the sunshine, swim the sea, drink the wild air.” – Ralph Waldo Emerson And: “Even castles in the sand, fall into the sea, eventually.” – Jimi Hendrix

When you’re not in the kitchen, what’s your warm-weather activity of choice?
I’m a summer baby. Love being out on the water — kayaking, paddle boarding, sailing. Followed by outdoors BBQ with friends. Add a campfire in and it’s perfect.

Fill in the blank! The best thing about summer in the County is…
The lake, sunrise + sunsets in that big sky.
