This position offers the opportunity to work with a fantastic culinary team. The role is committed to providing exceptional quality and service to our guests.

    Requirements:
    - Must have a minimum of 1-3 years experience in a very fast paced environment
    - Available to work full time flexible schedule including evenings (Nights) and weekends (Brunch- Saturday + Sunday)
    - Must be disciplined and have respect for colleagues
    - Culinary diploma is preferred

  • SOUS CHEF

With imminent expansion plans, this role provides a unique opportunity for an experienced, passionate and innovative culinary professional and inspiring leader who is looking for a rewarding hospitality career with opportunities for advancement.

    We are seeking candidates with a combination of creativity, skills and experience that include operational + kitchen management excellence in a high volume business, as well as a proven desire to strive for continuous culinary innovation. The ideal candidate will bring management experience from a similar environment, as well a strong culinary background, staff management, operations, safety and compliance.

    RESPONSIBILITIES:
    Reporting to the Drake Hotel's, Chef de Cuisine, you will play a key role as part of a small, interdependent management team that may include: Hotel, Culinary, Special Events, Security, Human Resources and Corporate Service departments.

    While on shift, your role will include, but not be limited to:

    • Preperation of mise en place, staff meals, specials and catering functions
    • Hands on receiving of products + ordering
    • Understanding, adhering to and executing all kitchen operational policies + procedures, standards and training program
    • Ensuring a unique and consistent guest dining experience by actively managing the team and resolving issues, should they arise
    • Training, motivating and overseeing a team of approx. 8 staff
    • Maintaining a strong focus on achieving and/or exceeding revenue targets, within acceptable labor cost and service standard parameters
    • Monitoring and managing service, quality, health + safety and cleanliness
    • Use local and seasonal ingredients to create innovative menus specials
    • Accountable for ordering and working closely with our commissary kitchen
    • Responsible for the preparation and execution of catering events and service

    QUALIFICATIONS:
    • 3-5 years of progressive kitchen leadership experience in a fine or casual dining environment
    • Demonstrated awareness of and interest in current culinary trends in the marketplace
    • Operations management experience in a high volume establishment with significant evening and catering/special events business
    • Experienced trainer and mentor to large staff teams
    • Demonstrated patience, tact and diplomacy while leading a diverse team of industry professionals
    • Ability to multi-task, remain cool and keep up in a fast paced environment.
    • Excellent interpersonal and communication experience, both verbal & written
    • Excellent organizational skills, with timely delivery of all required administrative work
    • Flexible to work days, weekends and holidays (Desired schedule - Wednesday to Sunday)
    • Red Seal Certification or equivalent considered a strong asset

    The Chef de Cuisine, requires a combination of skills and experience that include operational excellence in a high-volume business, as well as a proven desire to strive for continuous culinary innovation. They play an integral role in innovation of our offerings, specials, regular menus, catering and special event programs, ensuring that they remain fresh and exciting. Working with the Corporate Executive Chef, the culinary development will be reflective of the Drake brand and our growth, with a keen eye to responsible cost containment and revenue growth. The successful incumbent will have a passion for the culinary world and current movements, been keen to connect within the community and participate in culinary events that will continue to drive Drake’s culinary brand forward.

    The ideal candidate will bring management experience from a similar environment, as well a strong culinary background, staff management, operations, safety and compliance skills. The chef will be focused on quality and consistent execution of the food program and will participate in menu development, working closely with the close-knit committee of Senior F+B Front of House leadership, Kitchen leadership and the owner. The Chef de Cuisine will take a lead role in staff development, recruiting, on-boarding and training to build a strong kitchen culture which attracts and retains exceptional and up and coming talent. This position will have primary reporting to the Corporate Executive Chef and dotted line accountability to the General Manager.

    RESPONSIBILITIES:

    Reporting to the Corporate Executive Chef, you will work in partnership, with your focus on culinary development, training and The Drake’s primary focus on overall kitchen management, cost and revenue management and standards development. You will contribute as part of a small, interdependent management team that may include: Hotel, Culinary, Special Events, Security, Human Resources and Corporate Service departments of The Drake.

    Responsibilities will include, but not be limited to:

    • Understanding, adhering to and championing all kitchen operational policies + procedures, standards and training programs
    • Acting as a keen talent scout for the kitchen, working with HR to recruit, train and mentor new kitchen staff and students
    • Acting as a collaborate member of the Drake Hotel management team, working closely with Special Events, Marketing, F+B FOH and Hotel to create exceptional offerings for our guests and increase Drake’s profile as a dining destination
    • Ensuring a unique and consistent guest dining experience by actively managing the team and resolving issues, should they arise
    • Supporting the Corporate Executive Chef to maintain a strong focus on achieving and/or exceeding revenue targets, within acceptable labor cost, food cost and service standard parameters
    • The Chef de Cuisine will have the opportunity to take a lead position in the community outreach initiatives of The Drake Hotel, by attending and participating in Drake approved culinary events, competitions and charity initiatives
    • Monitoring and managing service, quality, health + safety and cleanliness

  • DRIVER

    Drake Commissary; The Drake Hotel's first commissary outpost to open in spring 2017 on Sterling Rd., in the evolving Junction Triangle, is seeking a dynamic, commissary kitchen DRIVER to make deliveries between our locations and weekly deliveries, in and outside the GTA. Driver will also assist with catering deliveries. The role is committed to providing exceptional quality and service to our vendors and internal stakeholders.

    Responsibilities include but are not limited to:
    - Ensure all deliveries are complete and up to Drake Commissary Standards
    - Returning all shipping equipment (blue racks, pizza bins, pizza bags, re-usable containers) to the commissary and putting them away in their proper storage place
    - Closing all delivery POs with the customer and working with department leads to ensure customer receives their full order in a timely and courteous manner
    - Purchase of produce from the Ontario Food Terminal and other small vendors, ie, Kensington or Chinatown.
    - Meet the Drake Hotel Properties quality standards
    - Devonshire linen deliveries (long drive, 5/6 hrs round trip)
    Requirements:
    - Hospitality experience is an asset
    - Valid Driver’s license required and has a great driving record
    - Must be flexible to work early mornings & weekends and have experience driving a commercial van
    - Trailer towing an asset
    We are looking for a commissary kitchen DRIVER to make deliveries between our locations and weekly deliveries, in and outside the GTA.
