Sunday Nights - Northern Canada

For Canada's 150th birthday we're taking a culinary trek across the country. First stop: Northern Canada.

"My favourite part about being Canadian and cooking in Canada is the opportunity to learn from so many different types of people that live here. Our vast landscape has so much variation to offer. When you're focusing on different regions of Canada it's almost like looking at different countries," says Chef de Cuisine Alexandra Feswick.

The inspired dish takes cues from the ingredients and practices of Northern Canadian cuisine.

The first course is a Smoked Arctic char salad with cured egg yolk, mustard greens, preserved confit potatoes, poached fennel and radish.

The second course is a bison ragout in which the meat has been braised for ten hours, resulting in a tasty, stick-to-your-bones kind of comfort dish that's perfect for wintery nights whether you're in the furthest most Northern point or just on Queen street West.
