We chatted with the Drake Hotel Properties’ Corporate Executive Chef, Ted, Corrado, about the DRAKE PANTRY collection – his personal faves + some kitchen tips.</

1. Which item in the collection is your favourite + why?
Definitely Earl Grey Infused Maple Syrup - maple syrup is one of my go to ingredients when I cook. The addition of the earl grey adds a nice floral hint.

2. What inspired some of the more ‘creative’ flavour combinations?
Seasonality is generally our starting point, Jonas goes down to the food terminal to source his ingredients. Other stuff comes from some farmers we connected with in Prince Edward County. Once we get an ingredient we like, we try to add an interesting flavour that you may not expect. That’s what make our offerings unique.

3. What is piccalilly + how do you use it?
English Piccalilly is a classic English condiment, generally made up of vegetables, mustard and turmeric. It’s an awesome addition to a sandwich.

4. What’s your favourite dish currently on the menu + which property can you find it at?
Drake One Fifty: Beef Cheek + Barley Soup
Drake Devonshire: 72-hour Slow Cooked Short Rib
Drake Hotel: Ted’s Chicken Parm sandwich… but that’s a persoal bias

5. What are 3 must-have staple pantry items that every chef (or aspiring chef)?
Good salt, good olive oil + hot sauce

6. What’s your fave charcuterie board condiment?
Grainy Mustard

Chef Ted Corrado joined Drake Hotel Properties as Corporate Executive Chef in 2013. Prior to taking the culinary reins at Drake, Corrado was Executive Chef at the Royal Ontario Museum's lauded c5 Restaurant, where he was part of the 2006 launch team as Chef de Cuisine. In its first year, c5 was heralded as one of Toronto Life's 10 Best New Restaurants, a Top Ten accolade the restaurant held each year that Corrado helmed its kitchen.
