Don't get us wrong, we do love indulging during the holidays; triple helpings of apple pie, a seemingly bottomless cup of (spiked) eggnog and who could forget our mouth watering Drake Burger? But when January comes, we always feel like we need to lighten ourselves up- just a little bit anyway! Our Drake pastry chef, Kara Lackie, shares a wholesome granola bar recipe- it's perfect for busy mornings + tasty snack time.
Drake Granola Bars
Yield: One 9X9 inch pan
2 cans sweetened condensed milk
4 1/2 cups old-fashioned oats
2 cups toasted almonds
1 1/2 cups cranberries
1 1/2 cups shredded unsweetened coconut
Lay oats, nuts, and coconut out on a pan and toast in a 350 degree oven for 8-10 minutes, until golden. Cool.
Set oven down to 250 degrees and cut parchment paper to line your 9x9 pan.
In a medium sized pot, heat the condensed milk.
Add all of the dry ingredients and stir to thoroughly mix and evenly distribute all ingredients.
Pour the mixture into pan and flatten with a spatula or the back of a spoon.
Bake for about an hour, until the mixture looks dry and is only slightly sticky to the touch, and just beginning to get browned.
Remove from oven and allow to cool completely in the pan. Use a spatula to remove the entire contents of the pan to a cutting board and then cut into bars.
Store in an air tight container or freeze. You can use any combination of dried fruit and nuts in this recipe. I’ve experimented with dried cherries, hazelnuts and dark chocolate chips or dried apricot and cashew and the results have been delicious.
